Bacon and Five Cheese Macaroni & Cheese (Mac & Cheese)

Ingredients

• 1/2 cup goat cheese crumbled
• 1/2 cup Emmentaler cheese grated, swiss is a good substitute
• 1/2 cup Gruyere grated
• 1 cup Parmesan cheese grated
• 1 cup white cheddar grated
• 4 ounces butter cubed, (1/4 pound)
• 1/2 cup flour
• 2 cups white wine
• 1 pint heavy cream
• 2 cups milk
• 1 cup bacon diced
• 2 teaspoons nutmeg
