• 3 ounces pork breakfast sausage, removed from the casing
• 1 tablespoon unsalted butter
• 2 tablespoons all-purpose flour
• 1 1/3 cups whole milk
• 1/2 teaspoon Tabasco sauce
• 1/8 teaspoon salt
• 1/8 teaspoon ground black pepper
• Biscuits:
• 2 1/4 cups all-purpose flour
• 2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1 teaspoon salt
• 12 tablespoons unsalted butter, chilled and cut into small dice
• 1 cup low fat buttermilk
• 1 tablespoon melted butter
