• 2 tbsp granulated sugar
• 1 tbsp lemon juice
• 4 tsp cornstarch
• 21/3 cups granulated sugar
• 11/4 cups liquid egg whites
• 3 cups unsalted butter, cubed and softened
• 1/2 cup coconut cream
• 1/2 tsp coconut extract (optional)
• 2 (to 3) cups unsweetened coconut flakes
