Ingredients: 2 TBSP of frying oil (any kind) (adjust if needed); ½ onion - peeled and finely chopped; ½ cup of brown sugar; 1 cup of water; 2 LB of Roma tomatoes; ¼ cup of apple cider vinegar; 2 TBSP of Extra Virgin Olive Oil; 2 TSP of ground smoked paprika; ¼ TSP of ground cayenne pepper; 2 TSP of mustard seeds (or 2 TBSP of yellow mustard); ¼ TSP of cloves; ¼ TSP of cinnamon; 3 cloves of garlic - peeled and grated (or pressed); ¼ TSP of salt; ¼ TSP of pepper - ideally freshly ground
