Summer berry & lemon curd semifreddo - Clarence Court Recipes
Our Summer Berry & Lemon Curd Semifreddo recipe is the perfect way to fully appreciate the taste and luxury of Clarence Court eggs.
Ingredients
- 300g fresh or frozen summer berries (a mix of strawberries, raspberries, blackcurrants, red currants and black berries works well)
- 150g good quality lemon curd
- 1 tablespoon limoncello (optional)
- 50g caster sugar
- 3 Large Clarence Court Burford Brown eggs, separated
- Zest of 2 unwaxed lemons
- 400ml double cream
- 50g shelled unsalted, pistachios (blanched if you can find them)
- 50g good quality shortbread biscuit
