Ingredients: ½ cup butter (softened); ½ cup date sugar (or coconut sugar); ½ cup Monk Fruit Sweetener (or Monk Fruit sweetener); 1 whole egg; 1 teaspoon Vanilla; 1 cup einkorn flour (all purpose flour); ½ teaspoon baking soda; 1 teaspoon Baking powder; ½ teaspoon Celtic Sea Salt; 1 cup oats (old fashioned); 3 ½ ounces Chocolate chips (Hu brand) (I like the HU brand sweetened with only dates)

I have made these cookies so many times. I love making desserts with einkorn flour it has a buttery flavor and I digest it so much better than I do other flours
