Golden Bocconcini Bites — La Casa Del Formaggio

Ingredients

• 440g Cherry Bocconcini
• 3 cups cubed ciabatta bread
• 4 sprigs fresh rosemary, leaves only, chopped
• 2 garlic cloves
• sea salt and freshly cracked black pepper
• 1/2 cup whole wheat flour
• 2 free range eggs, beaten
• extra virgin olive oil, for frying
• 50g Grated Parmesan Tub
• 1 bunch of basil
• 1/2 cup fresh mint leaves (optional)
• 1 garlic clove (or half, depending on taste)
• 1/2 cup pinenuts
• 1/4 cup verjuice
• 1 Tbsp capers
