Shelby's Apple Pie recipe - from the The Yandrick Family Cookbook Project Family Cookbook

Ingredients

• Dough:
• 2.5 C all-purpose flour
• 4 teaspoons sugar
• 1/4 teaspoon fine salt
• 14 tablespoons cold butter, diced
• 1 large egg, lightly beaten with 2 tablespoons cold water
• Filling:
• 2 T. freshly squeezed lemon juice
• 3 lbs. of apples: I typically use a mix of whatever the grocery store suggests as baking apples, granny smith, and golden delicious
• 1/3 C. sugar
• 1/3 C. Brown Sugar
• 1/4 C. unsalted butter
• 1/4 Tsp.ground cinnamon
• Generous pinch of ground nutmeg
• 1 large egg, lightly beaten
