• 1/2 pound Yukon Gold potatoes, peeled and cut into 1/2-inch cubes
• 1 tablespoon salt
• 4 ounces Portuguese sausage, diced
• 6 peppadew peppers, diced
• 1/3 cup roasted almonds, coarsely ground in a food processor
• 1 tablespoon Spanish smoked paprika, divided
• Freshly ground black pepper
• 2 tablespoons olive oil
• 3 pound boneless pork loin
