• Vegetable oil for frying
• 3/4 cup (175 ml) all-purpose flour
• 3/4 cup (175 ml) fine-grind cornmeal
• 2 1/2 tsps (12 ml) sugar
• 1 1/2 tsps (7 ml) baking powder
• 1 1/2 tsps (7 ml) kosher salt
• 2 tsps (10 ml) jazzy
• 4 tbsps (1/2 stick/60 ml) unsalted butter cubed and chilled
• 1 large egg beaten
• 1 cup (250 ml) buttermilk
• 1 jalapeño seeded and finely chopped
• 1/2 small yellow onion finely chopped
