Ingredients

  • For the lamb:
  • 50 grams (3½ tablespoons) butter
  • 1½ kg (3.3lb) lamb ossobuco (cross-cut veal shanks), about 4 pieces
  • 2 large onions, halved and thinly sliced
  • 2 carrots, peeled and sliced
  • 1 leek, sliced
  • 3-4 garlic cloves, peeled
  • 4 fresh hyssop twigs
  • ½ tablespoon black peppercorns
  • 3-4 whole cardamom pods
  • 2 bay leaves
  • 5 Allspice pepper
  • 1 cinnamon stick
  • 1 whole clove
  • 2 liters (2qt) water or lamb stock
  • Salt
  • For the Maqluba:
  • 5 tablespoons olive oil
  • 3 cups fresh broad bean, without the pods (or fresh/frozen broad beans/ peas)
  • 2½ cups basmati or jasmine rice
  • 1 teaspoon Baharat spice mix
  • ½ teaspoon turmeric
  • 1 teaspoon ground black pepper
  • 30 grams (2 tablespoons) butter
  • To serve:
  • 5 tablespoons pine nuts, almonds, cashews, or a mixture, toasted
  • 2 tablespoons chopped parsley
