• 1/2 cups (125 mL) pineapples, diced
• 2 green onion, chopped
• 2 Tbsp. (30 mL) Maple syrup
• 1 Tbsp. (15 mL) lime juice
• ground pepper to taste
• 4 slices of toupie style smoked ham, each about 3/4 inch (2 cm) thick
• 2 tsp. (10 mL) butter
• 2 tsp. (10 mL) extra-virgin olive oil
