Radicchio and Grapefruit Salad

Ingredients

• ¼ cup walnut pieces (or other nut of your choice)
• 1 large red grapefruit
• 2 Tbsp extra-virgin olive oil
• 1 Tbsp balsamic vinegar
• 1 tsp honey
• ¼ tsp fine salt
• ¼ tsp freshly ground black pepper
• 3 cups lightly packed, torn radicchio leaves
• ¼ small red onion, thinly sliced
• 2 ounces soft goat cheese
