• 1-1/4 lbs (625 g) asparagus, tough ends trimmed
• 1-1/2 tsp (7 mL) olive oil
• 4 scallions, thinly sliced
• 8 oz (250 g) all-purpose potatoes, peeled and thinly sliced
• 1-3/4 cups (425 mL) water
• 1 tsp (5 mL) tarragon
• 3/4 tsp (3 mL) salt
• 1/4 tsp (1 mL) pepper
• 1/2 cup (125 mL) low-fat (1%) milk
