Ingredients

• 4 golden or yellow beets
• 1 red apple, sliced thin
• 1 Tbsp mint, chopped
• 1 cup fennel, shaved thin, fronds reserved for garnish
• 1 cup arugula
• ½ cup homemade, fresh ricotta
• Toasted sunflower seeds
• Flake salt, to taste
• Black pepper, to taste
• 1 small red apple, peeled and chopped
• ¼ cup white balsamic vinegar
• ½ cup olive oil
• 2 tsp shallot, chopped
• 1 Tbsp Dijon mustard
• 1 Tbsp honey
• 1 Tbsp lemon juice
• Salt, to taste
