A really filling soup that works well as a main meal and freezes brilliantly - so whip up a big batch and freeze some for later. This is designed to be a low cost recipe.
Ingredients
- 50g/1¾oz butter
- 1kg/2lb 4oz onions , finely sliced
- salt and black pepper
- 1 tbsp plain flour
- 1.2 litres/2 pints stock (ideally beef but chicken or vegetable would also be fine)
- 1 baguette , cut into 1cm/½in slices
- 150g/5½oz Gruyère cheese, grated
