Ingredients

• 8 ounces cremini mushrooms, sliced (225g)
• 1 shallot, finely chopped (1 medium)
• 4 ounces fresh spinach, roughly chopped (115g)
• 1 teaspoon dried thyme
• ½ teaspoon salt, or to taste
• ¼ teaspoon black pepper, or to taste
• 4 large eggs
• 1 cup whole milk (240 ml)
• ½ cup heavy cream (120 ml)
• ½ cup shredded Gruyère cheese (50g)
