• Olive oil spray for grill rack
• 1 shallot (diced)
• ½ medium-sized yellow onion (diced)
• 1 TBS olive oil
• 18 ounces ground beef chuck
• 6 ounces ground venison
• 2/3 link boudin blanc sausage (meat squeezed out from casing and casing discarded)
• 1 tsp garlic powder
• 1 tsp black pepper
• 1 tsp Creole Seasoning
• 1 tsp Steak Seasoning
• 2 TBS Grey Poupon Deli Mustard with Horseradish
• 1 large egg , lightly beaten
• 5 Seeded Spelt Crackers (ground into bread crumbs in coffee grinder)
• 6 1 ounce slices of Pepper Jack Cheese
• 6 white flour hamburger buns
• 6 ¼ inch slices ripe tomato
