Chargrilled Southwest Burger

Ingredients

• 4 - 1/2 lb. beef patties
• Thundering Longhorn beef rub
• 1 sweet onion, sliced thin
• Buttermilk and flour, for dredging
• Oil, for frying
• 4 - pepper jack cheese slices
• Cilantro lime mayo (see recipe)
• Pickled jalapeños
• Hamburger buns
• Hot sauce of your choice
• 1 cup mayo
• 4 cloves garlic, minced and crushed into a paste
• ½ tbsp. Thundering Longhorn beef rub
• Pinch of salt
• Handful of cilantro, chopped
• ½ tsp. lime zest
• Juice of 1 lime
