Ingredients

• 6 large eggs
• 5 tablespoons extra-virgin olive oil
• 1 teaspoon fresh lemon juice
• Cayenne pepper
• 1 tablespoon finely chopped flat-leaf parsley
• 1 tablespoon minced scallion
• 1 tablespoon small capers, rinsed, plus more for garnish
• 1/2 pound jumbo lump crabmeat, picked over (1 cup)
• Salt and freshly ground black pepper
• 1 tablespoon sherry vinegar
• 1/2 teaspoon Dijon mustard
• 5 ounces mixed greens, such as mache, frisee, baby spinach and amaranth (5 cups)
