• ¾ cup buttermilk or ¾ cup milk mixed with 1 teaspoon cider vinegar
• 6 tablespoons butter
• 1 cup brown sugar
• ½ cup molasses
• 1 large egg
• 5 ¼ cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon ginger
• 1 teaspoon cinnamon
• ½ teaspoon sea salt
• 3 egg whites
• ½ teaspoon cream of tartar
• 4 cups confectioner’s sugar
