Creamy Chicken and Mushroom Orzo - Mitsides Group

Ingredients

• 1 Tbsp olive oil
• 500g chicken breasts, cut into 2cm cubes
• 350g mushrooms, sliced
• 1 onion, chopped
• 1 garlic clove, minced
• 1 pack Mitsides Orzo (500g)
• ¼ cup lemon juice
• 1 cube Mitsides Chicken Bouillon, dissolved in 1½ ltrs boiling water
• ½ tsp dried thyme
• ½ tsp dried oregano
• 3 cups baby spinach, roughly chopped
• 3 Tbsp parsley, chopped
• 1 tsp lemon zest
• ½ cup whole milk
• 1 cup parmesan cheese, grated
• Salt and pepper
