Creamy Broccoli Soup – Cooking Aboard with Jill

Ingredients

• 1/3 cup butter
• 2 onions, rough chop
• 4-6 cups chicken stock
• 1 large head or two average size heads of broccoli, rough chop
• 2-3 carrots, rough chop
• 3 stalks celery, rough chop
• 2 tablespoons minced garlic
• 1 package of Boursin cheese
• 1 cup shredded cheddar cheese
• Salt and pepper
• Lemon zest
• Garnish with croutons and chopped fresh chives
