Speculoos Sandwich Cookies

Ingredients

• ½ cup (125 mL) GAY LEA - Unsalted Butter, at room temperature
• 2 ¼ cups (550 mL) all purpose flour
• ½ tsp (2 mL) baking powder
• 2 tsp (10 mL) ground cinnamon
• ½ tsp (2 mL) ground ginger
• ¼ tsp (1 mL) ground nutmeg
• ¼ tsp (1 mL) ground cloves
• ¼ tsp (1 mL) ground cardamom
• ¼ tsp (1 mL) ground anise
• ¼ tsp (1 mL) white ground pepper
• ¼ tsp (1 mL) salt
• ½ cup (125 mL) granulated sugar
• ¼ cup (60 mL) brown sugar
• 1 egg
• ¼ cup (60 mL) molasses
• 1 tsp (5 mL) vanilla extract
• 1/3 cup (75 mL) GAY LEA - Unsalted Butter, at room temperature
• 1/2 cup (125 mL) speculoos cookies, crushed (about 12 cookies)
• 2 tbsp (30 mL) sweetened condensed milk
• 2 tbsp (30 mL) milk, evaporated
• 2 tbsp (30 mL) icing sugar
