• 200 g dark chocolate
• 25 g cocoa powder
• 2 eggs
• 1 egg yolk
• 100 ml water
• 175 g caster sugar
• 25 g butter
• 225 ml double cream
• 5 g pink peppercorns
• 75 g sugar
• 1/2 fresh pinapple
• mint leaves
• 50 g glucose syrup
