Ingredients

• - 3 LB russet potatoes (4-5 large potatoes)
• - 1 large white or yellow onion
• - 1/4 cup plain dried breadcrumbs
• - 3 teaspoons kosher salt
• - 3 teaspoons garlic salt
• - 1/2 teaspoon black pepper
• - 4 teaspoons baking powder
• - 4 eggs
• - 1/2 to a full jar of Zia Hatch Green Chile (strained)
• - Plenty of frying oil (to maintain 1/8 inch of oil in pan)
• - Applesauce and sour cream (for serving, optional)
• - Chives (for serving, optional)
