Ingredients

• 3 medium fennel bulbs
• 3 tablespoons olive oil
• 125ml apple cider
• 1 orange juiced and finely grated zest
• 1 lemon juiced and finely grated zest
• 2 thyme sprigs
• 1 bay leaf
• 3 garlic cloves peeled and crushed
• 1 teaspoon chopped parsley
• 1 teaspoon chopped fennel fronds
