Speculoos parfait as a Christmas dessert - eis-macher.de

Ingredients

• 3 egg yolks
• 75 g sugar or Raw cane sugar*
• 400 g cream
• 1/2 TBSP Speculoos spice*
• 1 pinch of salt
• approx. 200 g Speculoos cookies*
• 1/2 glass Sour cherries* (as half of 680 g filling, 350 g drained weight)
• 15 g sugar or Raw cane sugar*
• 1 TSP Peppercorns, black*
• 1/2 Cinnamon stick*
• 1 tablespoon cornstarch
• a little lemon or lime juice
• optional: 1 tbsp. brown rum* or half a bottle of rum flavoring
