Jamaican Pork Stew

Ingredients

• 4 Tsp olive oil
• 1.5# center-cut pork chops, cubed
• 2 Tsp flour
• 2 medium onions, thinly sliced
• 2 cloves garlic, crushed
• 4 Tsp (light or dark) rum
• 2 (16 oz) cans tomatoes, drained and crushed
• 1/4 tsp crushed red pepper flakes
• 1 tsp freshly ground black pepper
• 1/4 tsp ground allspice
• 2 cups beef broth
• 4 small new potatoes, diced
• 2 Tsp dark molasses
• salt (to taste)
• cooked rice (optional)
