- 2 Tbsp butter
- 1 C chopped sweet onion
- 6 cloves minced garlic
- 1 1/2 tsp dried basil
- 1/3 C flour
- 1 14 oz can chopped fire roasted tomatoes, drained
- 1/2 C sun dried tomatoes, finely chopped
- 7 C chicken stock
- 16 oz pack fresh tortellini (found in the refrigerator section)
- 4 C spinach, coarsely chopped
- 1 C heavy cream
- 1/3 C grated parmesan
- slice parmesan for garnish
