Ingredients

• 2 lb pork tenderloin
• 2 apples, such as Granny Smith, cored and sliced
• 1 onion, finely chopped
• 3 cloves of garlic, minced
• 1 cup of breadcrumbs
• 1/2 cup chicken broth
• 2 tablespoons olive oil
• 1 teaspoon fresh thyme leaves
• 1/2 teaspoon fresh rosemary, chopped
• Salt and freshly ground black pepper
• Kitchen twine for tying the loin
