• 4 md Carrots, peeled and chunked
• 1 tablespoon Peanut Oil
• 1 lg Onion, chopped
• 2 Cloves Garlic, minced
• 1 tablespoon Fresh Ginger, minced
• 2 teaspoon Ground Coriander
• 3 Tomatoes, chopped
• 1 lg Zucchini, cubed
• 2 cups Tomato Juice
• ½ cups Peanut Butter
• Salt
• Pepper
