- 1 roasted poblano chili (chopped)
- 3 cloves garlic (peeled and minced)
- 1 pound tomatillos (husked, rinsed, and quartered)
- 3 tablespoons finely chopped cilantro (plus whole leaves for garnish)
- 1 teaspoon ground cumin
- 1 tablespoon freshly squeezed lime juice
- 1 pinch each kosher salt & black pepper
- 8 lour or corn tortillas (warmed)
