• 700g / 1.5 lb brisket
• 1 1/2 tbsp Gran Luchito Chipotle paste
• 400 g tomato sauce (100g for cooking meat, rest for covering enchiladas)
• 150g / 1 cup beef stock
• 75g / 1/2 cup dark beer
• 2 bay leaves
• 1 teaspoon ground cumin
• 1 teaspoon black pepper
• Small handful of coriander, roughly chopped
• 1/2 sachet Gran Luchito Cantina Beans
• 1 packet Gran Luchito Soft Taco Wraps
• 300 g Remaining tomato sauce
• 200g / 7oz grated cheddar cheese
• 1 red chilli, finely chopped
• A handful of coriander leaves
• 50g / 1.7oz sour cream
