Sweet Spice Couscous Cake – Spice Pots
A really delicious and moist cake, which has the unusual addition of couscous!
Ingredients
- 220g plain flour
- A couple of pinches of salt
- 3 tsp baking powder
- 1.5 tbsp Sweet Spice blend
- 80g couscous
- 110g ground almonds
- 225g unsalted butter, softened
- 200g golden caster sugar
- 6 eggs
- 1 tsp vanilla essence
- Zest of 2 lemons
- 300g golden caster sugar
- 2 strips of lemon zest (optional)
- 1 cup of lemon juice
- Greek yoghurt, to serve
