Ingredients: 125 g unsalted butter; 65 g soft brown sugar (or castor sugar); 1 egg (separated); 1 teaspoon vanilla extract; 150 g plain flour; 1 teaspoon baking powder; 1/4 teaspoon salt; 125 g cashew nuts (or any mix of nuts, coarsely chopped); a little jam (or chocolate buttons to fill the indents.)
