Ingredients

  • ½ onion
  • 1 rib celery
  • 1 carrot
  • 2 cloves garlic
  • 1 Tbsp extra virgin olive oil
  • 1 bay leaf
  • 6 oz ground beef
  • 6 oz ground pork
  • Diamond Crystal kosher salt
  • freshly ground black pepper
  • 1 Tbsp Japanese curry powder
  • 1½ cups chicken or vegetable stock
  • 2 Tbsp tonkatsu sauce (or make my Homemade Tonkatsu Sauce)
  • 2 Tbsp ketchup
  • 2 Tbsp unsalted butter (divided)
  • ½ cup Mozzarella cheese (2 oz; or use another cheese like Gruyere or Parmesan)
  • ½ cup Romano cheese (2 oz; or use another cheese like Gruyere or Parmesan)
  • 2 Tbsp panko (Japanese breadcrumbs)
