Meatballs in a Spicy Chipotle Sauce by What Dad Cooked

Ingredients

• For the meatballs
• 900g mix of minced pork and minced beef
• 1 medium onion
• 2 cloves garlic
• 2 red chillies – not too hot – or to taste
• 1/2 tsp salt
• 30g white breadcrumbs
• 80ml double cream
• 2 large eggs
• 100g grated Wensleydale cheese
• 25g fresh parsley
• 2 tsp dried oregano
• 3tsp paprika
• 2 tsp cinnamon
• 1 tsp cumin
• Vegetable oil for frying
• For the chipotle sauce
• 400g tin of tomatoes
• 400ml chicken consomme or stock
• 4 cloves garlic
• 2 tsp chipotle flakes
• 1 tbs tomato puree
• 1 tsp sugar
• 4 bay leaves
• 2 tsp smoked paprika
• 1 tsp cinnamon
• 1/2 tsp allspice
• To serve
