• 1.5 cups button mushrooms, finely chopped
• 2 tbsp shallots, finely chopped
• 2 cloves garlic, minced
• 1 tbsp fresh thyme leaves, plus sprigs for garnish
• 2 tbsp unsalted butter
• 2 tsp Dijon mustard
• 1 large egg, beaten with 1 tsp water (for egg wash)
• Salt, to taste
