Ingredients

• 2 tbsp olive oil
• 1 onion diced
• 1 red pepper and 1 green pepper diced
• 2 garlic chopped
• 1 red chilli chopped (optional)
• 2 tsp ground cumin
• 2 tbsp tomato puree
• 4 tbsp chipotle paste
• 1 tin chopped tomatoes
• 200ml chicken stock
• Approx. 350g cooked chicken
• 1 tin black beans drained – or use pinto/kidney beans
• Chopped coriander
