- 1 ½ cups unbleached flour
- ½ cup whole wheat flour
- 2 tsp. baking soda
- 1 tsp. salt (scant)
- ¼ tsp. baking soda
- 1 Tbsp. cinnamon
- 3 large eggs
- 1 cup vegetable oil
- 1 cup granulated sugar (scant)
- ½ cup golden sugar (not packed)
- 2 medium-sized zucchini grated (2 cups)
- 2 tsp. pure vanilla extract
- 1 cup raisins (preferably Thompson)
- 1 cup chopped walnuts
