Ingredients

• 1 lb carrots (trimmed and peeled, sliced into ¼-inch coins.)
• 2 TBSP butter or olive oil
• Coarse kosher salt and freshly ground black pepper
• 1 TBSP minced ginger
• 2 Cara Cara oranges (juiced)
• 1 tsp freshly squeezed lemon juice
• 2 TBSP honey
• 2 TBSP chopped basil
• 3 dates (pitted and thinly sliced)
• 1 TBSP chopped toasted pistachios
