• 4 tablespoons margarine or butter (1/2 stick)
• 2 tablespoons shortening
• 1 1/2 pounds sweet potatoes (about 3 large) peeled and cut into 1-inch chunks
• 3 large eggs, separated
• 3/4 cup packed light brown sugar
• 1 1/2 cups half-and-half or light cream
• 2 tablespoons light molasses
• 1 1/4 teaspoons ground cinnamon
• 1/4 teaspoon ground nutmeg
• 1/4 teaspoon cream of tartar
• 1/3 cup sugar
