Ingredients

• 4 sweet potatoes (each approx. 250 g)
• 1 tbsp olive oil
• 1 onion
• 4 garlic cloves
• 5 dried tomatoes
• 1 tbsp ginger
• 1 organic lemon
• 1 tsp chilli flakes
• 1 tin chickpeas
• 100 g baby spinach
• 1 tin coconut milk
• 2 tbsp lemon juice
• 1 tsp ginger powder
• 1 tsp salt
