- 2 red bird’s eye chilli, chopped
- 1 tbsp coriander root, cleaned and chopper (or coriander stem)
- 1 tbsp garlic, peeled and chopped
- ½ tbsp salt
- 5 tbsp lime juice
- 3 tbsp fish sauce
- 2 tbsp palm sugar (or brown sugar)
- 8 live scallops (large size)
