Ingredients

• 1 1/2 pounds russet potatoes, peeled and cut into 1-inch chunks
• 1 1/2 pounds red potatoes, peeled and cut into 1-inch chunks
• 1/3 cup half and half
• 1/3 cup chicken broth
• 1/2 cup unsalted butter, cut into cubes
• 1 small garlic clove, minced
• 1 1/2 teaspoon Dijon mustard
• 1 1/2 teaspoon salt
• 3 large eggs
• 2 tablespoons finely chopped fresh chives (optional)
