Ingredients

  • 4-6 chicken thigh pieces, cut into quarters
  • 2 tbs smoked paprika (plain also ok)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 4 cups short grain rice
  • 400g prawns (shelled, deveined with tail on)
  • 2 chorizo sausages sliced to ~1cm thickness
  • 4 cups chicken stock
  • 1/2 cup white wine
  • 1 Spanish (red) onion, chopped
  • 4 garlic cloves, finely chopped
  • 1 tin chopped tomatoes
  • 1 red capsicum (red pepper), chopped
  • handful of flat parsley, roughly chopped
  • 1 tsp dried chilli flakes
  • 1 bay leaf
  • pinch of saffron
  • 1/2 cup of peas (if frozen, let defrost)
  • 1 lemon for zest and juice
