- 2 – 1¼ to 1½” pork chops
- 1 cup olive oil maybe a little more
- ¼ cup white wine
- 4 sage leaves or 1 tbsp. dried sage
- 6 thyme sprigs or ½ tbsp. dried thyme
- 2 gloves garlic pressed or chopped fine
- Freshly ground pepper to taste
- 1 – 1½ lb skirt steak
- ½ cup olive oil maybe a little more
- 1 lime or ½ lemon squeezed
- 1 shallot chopped
- 1 pork tenderloin for every two people*
- Olive oil to cover
- ¼ cup dry white wine
- 2 tsp. garlic powder
- 6 sprigs fresh parsley or 1 tsp. dried
- 8 sprigs fresh thyme or 1 tsp. dried
- 1 russet potato per person
- Olive oil
- Aluminum foil
- Butter
- Sour cream
- Chives
- Black pepper
