Ingredients

• 10-12 (see notes below) friggitelli peppers
• 1 tbsp vegetable oil
• 1 onion diced
• 1 clove garlic thinly sliced
• ½ tsp smoked paprika
• ½ tsp fine sea salt
• 50g dark brown soft sugar
• 100g tomato purée
• 100ml sherry vinegar
• 100g salt cod (bacalhau) soaked overnight in cold water (see notes below)
• 250ml olive oil
• 1 clove garlic smashed
• 2 sprigs thyme
• ¼ tsp black peppercorns
• 250g mashed potato warm
