Ingredients

• 1 1/2 cups (225 g) unbleached all-purpose flour
• 1 1/2 tsp baking powder
• 1/2 tsp salt
• 6 eggs, at room temperature
• 1 cup (210 g) sugar
• 1 tsp (5 ml) vanilla
• 6 tbsp (90 ml) vegetable oil
• 1 can (300 ml) sweetened condensed milk
• 1 can (14 oz/400 ml) coconut milk (see note)
• 1/2 cup (125 ml) milk
• 2 cups (500 ml) 35% whipping cream
• 1/4 cup (55 g) sugar
• 3 cups (405 g) fresh strawberries, sliced
• 2 cups (300 g) watermelon, peeled and cubed
• 1 cup (145 g) pineapple, peeled and diced (optional)
• 1 lime, zest finely grated
